Gendai is a small Japanese kitchen in Sampaloc, Manila. The name means modern — cooking rooted in tradition, stripped to what matters.

Broth simmered long. Fish cut clean. Rice measured by hand. Nothing hurried, nothing loud.

We open at four and cook until eleven, every night of the week.

Broth

Tonkotsu drawn slow from pork bone. Shoyu kept light. Miso rich and even. Spice set to your word.

Salmon and tuna cut fresh each service. Sashimi laid seven slices, sushi pressed by hand.

Makimono built to order — seared salmon, mango, kani, tenkasu. Wrapped, cut, plated clean.
